Summer has arrived—and while I love baking, some days are just too hot to turn on the oven! ☀️Here are 3 of my favourite no-bake desserts to keep things cool and delicious.
Recipe #1: Current craving: Graham cracker ice cream sandwiches! 😍 No baking required, ideal for summer get-togethers, and seriously delicious.
Endlessly customizable! Use the ice cream of your choice, and the chocolate. Have fun with mix-ins, like sprinkles, or even nuts. I’d love to hear / see what you create! Tag me in a story or a post.🍦

INGREDIENTS
10 graham crackers
2 ½ cups vanilla ice cream
2 ½ cups chocolate ice cream
3 tbsp melted chocolate
INSTRUCTIONS
1. Put a piece of parchment paper on a tray. Lay out 2 rows of 5 graham crackers.
2. Place the softened vanilla ice cream over top, followed by chocolate ice cream. (Or flavours of choice.)
3. Place another graham cracker over top, pressing down firmly.
4. Drizzle with melted chocolate, freeze until solid about 1 hour. Enjoy!
Recipe #2: No-bake lemon cream cheese pie! 🍋🥧A refreshing treat for entertaining or just for you!

INGREDIENTS
1 ¼ cup graham cracker crumbs (or any cookie you have on hand)
1/3 cup butter, margarine or coconut oil
2 tablespoons of sugar
Rind of one large or 2 small lemons lemon
Juice from one large or 2 small lemons or ½ cup
1 can (14 oz) condensed milk
8 oz cream cheese cut into large cubes
INSTRUCTIONS
1. Add sugar and butter to graham crumbs and mix well. Pat into 9” pie pan, up the sides and on the bottom.
2. In a food processor or with a hand beater, purée lemon rind, lemon juice, condensed milk and cream cheese until smooth.
3. Pour mixture into a pie pan and chill for at least 2 hours or until firm. Enjoy!

INGREDIENTS
Crust
1 cup chocolate wafer crumbs
3 tbsp softened butter or margarine
Filling
1 lb light cream cheese
1 can (14oz) condensed milk
1/2 cup peanut butter
1/3 cup semi sweet chocolate chips
2 tsp oil
INSTRUCTIONS
1. Add cookie crumbs and butter or margarine and mix until crumbs hold together.
2. Add muffin liners to a 12 cup pan and divide crumbs on bottom, press firmly to hold.
3. Add cream cheese, condensed milk and peanut butter to food processor. Purée until smooth.
4. Divide cream cheese mixture over crumbs.
5. Melt chocolate and oil for 1 minute on high in microwave, just until melted. Drizzle over top of cheesecakes and with a knife swirl through.
6. You can freeze for 1-2 hours then refrigerate and serve, or refrigerate for about 4 hours before serving. Keep refrigerated or frozen. Enjoy!
