If you love apple desserts but want something a little lighter, this upside-down apple tart is a must-try! Instead of puff pastry and butter, I’ve swapped in crispy phyllo and heart-healthy olive oil, keeping it just as delicious but with a lighter spin.
These individual tarts are perfect for entertaining or a cozy night in. Best of all? They come together quickly and easily with just a handful of ingredients.

Ingredients
🍏 2 large apples, peeled and sliced (1/8” thick)
🍯 3/4 cup honey, warmed
🍬 2 tbsp granulated sugar
🍂 1/2 tsp cinnamon
🥄 6 sheets phyllo dough
🌿1/3 cup olive oil
❄️ Icing sugar (for garnish)
Instructions
1️⃣ Preheat the oven to 375°F. Line a large baking tray (or two smaller trays) with parchment paper.
2️⃣ Create the honey base: Drizzle 1 tbsp of honey onto the parchment in 8 spots (for 8 tarts).
3️⃣ Layer the apples: Place 6 overlapping apple slices over each honey drizzle. Drizzle a little extra honey on top.
4️⃣ Sprinkle flavour: Mix the sugar and cinnamon, then sprinkle over the apples.
5️⃣ Prepare the phyllo: Brush each of the 6 sheets of phyllo with olive oil, then cut into 8 squares. Place one square over each apple pile and brush the top with more olive oil.
6️⃣ Bake: Place in the oven and bake for 20 minutes, or until golden brown and crispy.
7️⃣ Serve & enjoy: Best eaten warm and fresh! Sprinkle with icing sugar before serving. If needed, reheat at 300°F in the oven or air fryer to keep them crispy.
