If you haven’t seen them yet, you’ve probably heard about melting potatoes—the latest viral food trend that's taking the internet by storm. And let me tell you, they live up to the hype. These potatoes are crispy on the outside, soft and tender on the inside, and just melt in your mouth with every bite.
I’m on a mission to try this technique with a bunch of different veggies (check out my melting sweet potatoes and melting onions) because this method is just too good to limit to potatoes. But for now, let’s focus on these delicious melting Yukon golds!
Ingredients:
2 1/2 lb Yukon gold potatoes (about 4)
1/4 cup olive oil
1/8 tsp salt
3/4 cup vegetable or chicken stock
Instructions:
Preheat your oven to 500°F (yes, you read that right!).
Cut the potatoes into 1” rounds and line a baking sheet with parchment paper. Pour the olive oil over the top of the parchment.
Place the potato rounds on the parchment paper and flip them over to coat both sides with oil. Sprinkle potatoes with salt for a little extra flavour.
Roast for 15 minutes, then flip the potatoes over and roast for another 15 minutes.
Once the potatoes are nicely browned and crispy, add the stock to the pan and roast for another 10 minutes, or until most of the stock is absorbed and the potatoes are soft and tender.
Optional: Garnish with some fresh herbs for extra flavour and colour.
And voilà—melting potatoes! They have that perfect crispy exterior, but the inside is so tender, it practically melts in your mouth.
This technique is so simple but totally upgrades your regular potatoes into something special. I can already tell these are going to be a regular in my cooking rotation—and I can't wait to try it with other veggies!
